3.2 Water
- OH is called a hydroxyl group it’s a negative ion (anion) meaning that the biological molecules that contain it slightly polar
- Hydrogen bonds are relatively weak interactions which break and reform between the constantly moving water molecules
- Water is a small molecule
- As water is cooled below 4ºC the hydrogen bonds fix the position of the polar molecules slightly further apart than the average distance in the liquid state
- Forming a giant, rigid but open structure with every oxygen atom at the centre of a tetrahedral arrangement of hydrogen atoms
